Framboise and Cardamom Truffles with Hazelnut Praline

I’m a little late on this one… Here’s my most recent attempt at the sweet stuff, this time it’s homemade truffles for Valentine’s Day. I’d originally made them for my Mom, but Emily talked me into rationing a few her way. This time around, I made ganache of Noi Sirius Milk Chocolate with Framboise and cardamom poached in heavy cream from Cedar Summit Farms. Once the ganache had set overnight, I rolled it into balls and tossed them in unsweetened cocoa powder, dipped them in a lightly salted Noi Sirius Dark Chocolate, and topped them with a Hazelnut Praline.
